Directions: 

In a small bowl, combine the mayonnaise, cilantro, water, scallion, lime juice, sugar, and chilli powder. Refrigerate until ready to use. Combine the beans, corn, tomatoes, bell pepper, and romaine lettuce in a large mixing basin. Serve the salad with the dressing tossing. 

Confetti salad with crumbled vegetables 

This salad is high in fibre, so it will fill you up and keep you satisfied for hours. It's a vibrant, entertaining salad that you'll want to add to your repertoire. 

Ingredients: 

4 cups cauliflower, chopped 

2 cups sliced carrot  

2 cups chopped celery  

4 cups chopped broccoli florets 

1 red pepper, chopped 

14 cup apple cider vinegar  

1 cup chopped onion  

2 minced garlic cloves  

3 tablespoons extra virgin olive oil 

2 tbsp. Italian seasoning 

14 teaspoon pepper  

1 teaspoon salt 

Directions: 

In a food processor, pulse the vegetables until they are finely chopped. In a small bowl, combine the garlic and vinegar. Whisk in the olive oil, then season with salt and pepper and Italian seasoning. Dress the salad and chill it for an hour before serving. 

Spicy peanut dressing on crunchy cabbage salad 

There's something for everyone in this salad. It's crunchy, with a mildly spicy dressing to go with it. It's even better because it's low in fat and calories, making it perfect for a weight-loss diet. 

Ingredients: 

14 head red cabbage,  

thinly shredded Napa cabbage 

1 carrot, peeled and julienned 

14 cup fresh basil  

1/4 cup cilantro  

1 cup finely cut snow peas 

1 avocado, diced 

14 cup chopped roasted cashews  

2 teaspoons black sesame seeds 

2 tablespoons peanut butter (creamy) 

rice wine vinegar, 2 teaspoons 

1 tsp sesame seed oil 

1 tablespoon of soy sauce 

12 teaspoon sriracha sauce  

1 teaspoon honey 

1 garlic clove, coarsely minced 

1 teaspoon freshly grated ginger 

2 tbsp. of water 

Directions: 

Toss the vegetables and half of the herbs together in a mixing bowl. Whisk together the peanut butter, vinegar, sesame oil, soy sauce, honey, capsaicin, garlic, ginger, and water in a small mixing bowl. Toss the salad with the dressing to mix. Finish with the remaining herbs, cashews, and sesame seeds.

This is a large salad that can be served as a meal. It's satisfying and won't bore you because it's full of terrific flavour. This is sure to be a favourite of yours! 

Ingredients: 

12 iceberg lettuce leaves,  

diced 12 English cucumber slices  

2 chopped tomatoes 

8 ounces cooked and diced chicken 

 2 hard-boiled eggs, sliced 

14 cup low-fat shredded cheese  

1 cup buttermilk ranch dressing (low fat) 

Directions: 

In a large mixing bowl, toss everything except the dressing. Toss with the ranch dressing to coat. 

Salad with stacked summer vegetables

Ingredients: 

3 zucchinis, seasoned 

four carrots 

12 onions, red 

1 to 2 cups torn lettuce 

lemon juice, 3 teaspoons 

14 cup extra virgin olive oil 

2 teaspoons dill snipped fresh 

peppercorns 

Directions: 

Make thin strips out of the zucchini. Season with salt and drain for 15 minutes in a colander. Carrots should be shaved and onion should be thinly sliced. Drain the zucchini and rinse it. Place one layer of zucchini in a serving dish, then layers of lettuce, carrots, and onion. Combine the lime juice and oil in a separate bowl. Drizzle a tiny amount over the vegetables. Rep the layers two more times. Cover and chill the salad for 1 hour. To serve, season with dill and pepper and cut the salad into squares.
